Stir-fry for 30 seconds, and then stir in the ketchup. Fry for another 20 seconds--frying the ketchup brings out the color and makes for a better depth of flavor in the sweet and sour sauce. Mix in the pineapple, pineapple juice, red wine vinegar, water, salt, and sugar, and bring the liquid to a low simmer for 2 minutes.

Sprinkle fish with 1 tsp. iodized salt (or 1 Tbsp. rock salt). Coat with flour or cornstarch. Fry in oil until golden brown. Set aside. Saute ginger and singkamas in margarine. Super easy! Just make sure your pineapple is big enough for the fish filets you pick. I got 5 pineapple planks from my pineapple, which is perfect for my family of 5. Lay each fish filet on top of a pineapple plank. Brush the fish with some Mazola Corn Oil and then sprinkle with salt and pepper. Mazola has a smoke point higher than most cooking.


In a food processor, briefly whirl the pineapple, lemon peel, lemon, chile, bell peppers, scallions, ginger and Tabasco till the chutney has a confetti-like appearance. Add reserved juice if chutney seems too dry. Add salt to taste. Arrange the fish in a lightly oiled baking dish. Grill the fish till tender and cooked through and serve topped.

Dissolve the cornstarch in pineapple juice. Heat a clean pan with oil, add the onion, garlic, and ginger, saute for a minute or until aromatic. Add the rest of the veggies except green onions. Add honey and soy sauce. bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in lemon juice. Pour half into a small serving bowl. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill fillets, uncovered, over medium heat for 4-5 minutes on each side or until fish flakes.

Add sauce ingredients to the frying pan and stir gently until thickened. Drizzle overtop of fish and pineapple mixture. Stir in green onions. Serve over rice with a sprinkle of sesame seeds. Layer the chips on a baking paper covered flat roasting tray and bake for 25 minutes, turning over halfway through. Place radishes, pineapple, lime and orange zest, sliced onion, chili and coriander powder a bowl. Add lime juice, orange juice, salt, honey and fish sauce. Mix through. Cut fish into small cubes or thin slices, add to the bowl.

Make marinade for the fish. Blend soy sauce, honey, sliced ginger, garlic and olive oil in a blender until smooth. Place fish and marinade in a ziplock bag or bowl for 20 minutes or up to 24 hours.
