Warm up the milk and mix it with the yeast and sugar. Allow it rest for a few minutes, so the yeast gets activated. Mix the flour, salt, and egg in a bowl along with the activated yeast mixture. Knead until you get a soft dough. Leave the dough to rise (twice it's size) in a warm place for at least 45 minutes to an 1 hour.

Preparation. Blend 7 cups flour and yeast in a large bowl. Set aside. Combine milk, water, sugar, salt and butter in a saucepan over medium heat. Use a thermometer and heat the mixture until the liquids register between 110 - 120 F. Pour liquids into the flour and yeast mixture and beat with a wooden spoon until the mixture in blended and sticky.

2. Using a mixer, stir and add milk at the same time. Add salt then more milk and keep mixing. 3. Sprinkle flour on a bench or board and then roll mixture to a thickness of 1 cm.

Instructions. Let all ingredients sit at room temperature before using. Combine yeast with warm milk and sugar until it dissolves and let rise in warm place for 30 minutes. In another bowl, combine flour, salt, lemon zest and vanilla sugar. Add yolks, rum, oil and yeast combined with milk.

Cover the dough with warm kitchen towel and leave it grow for 40-50 minutes (it must double in size). Knead the dough again and cut into two parts. One part cover with kitchen towel again and thin the second part into 2 cm thick dough. Use mould for "krafne" or normal glass 6 cm. in diameter. Cut round pieces.

Set aside. Choux Pastry. In a large pot, combine water, butter, salt, and sugar. Heat on medium-high heat until the butter is completely melted. When the butter is completely melted, add in the flour (all at once) and stir with a wooden spoon until a dough forms and pulls away from the sides and bottom of the pot.

Cool to 110 F. Meanwhile, dissolve the active dry yeast in 1 cup of 110 F water. In a large bowl or stand mixer fitted with the dough hook, place milk mixture, yeast mixture, and 3 large, slightly beaten room-temperature eggs, mixing until smooth. Add 6 cups all-purpose flour gradually, mixing until smooth.

Heat remaining 1.5 cups milk until lukewarm. Sift flour. In a mixer bowl start mixing eggs, add oil, lemon zest, sugar and then add milk. Add 2 cups of flour, mix. Add salt. Start adding remaining flour and keep mixing until dough forms a ball. Transfer to a bowl, cover with plastic wrap or kitchen towel and leave to rise until doubled.

Cut dough into 3-inch rounds. On half of the rounds place about 1 teaspoon of jam or jelly. Brush edge with a little egg white then top with remaining rounds of dough. Press to seal edges. Cover with cloth and let rise for 30 minutes or until double in bulk. Preheat the oil in a deep fryer or skillet. Gently place the doughnuts into the oil.

Instructions. In a large bowl, combine the yeast and 1 teaspoon caster sugar in ½ cup (150 ml) warm milk. Let it foam for 15 minutes. In another large bowl, whisk the egg, egg yolks, remaining caster sugar, oil, rum and vanilla sugar until fluffy. In the bowl of a stand mixer, add the flour.
