In a large, deep skillet or pot, heat the oil over medium heat. Add the kale, mushrooms, and cumin. Cook for 5 minutes, stirring frequently. Reduce heat to medium-low and cook, stirring occasionally, until the kale is wilted and mushrooms are browned, 15 to 20 minutes. Add the lentils and salsa and cook, stirring often, until heated through.

Prepare lentils according to package directions. Finely chop walnuts. Add the olive oil to a pan and sauté the garlic until golden, about a minute. Add the walnuts and stir, toasting for about 3 minutes. Add the minced chipotle pepper, cumin, oregano, and stir to combine. Add the tomatoes, diced pepper, and stir.

Lightly grease a large casserole dish. (I use a 9" x 13" cake pan.). Preheat your oven to 350°. On the counter (or other work space) lay out a tortilla.
