Bake for 10 minutes. Step Two: Make your filling. Blend eggs and sugar together in your food processor until pale and creamy. Add lemon juice and rind and blend together. Then add flour and baking powder and pulse. Pour the lemon filling over the hot shortbread crust and continue to bake until the middle is set.
