Brown corn: Melt butter in a large skillet over high heat. Add garlic and stir for 10 seconds. Add corn and cook for 5 minutes, stirring every now and then, until you get lovely golden brown bits and the corn is cooked and sweet (don't stir constantly, harder to brown). Season corn: Add salt and pepper halfway through cooking corn.

It was really good and I would have continued making it the same way if a sweet follower (Brenda Lowrance) had not sent me her recipe. I believe this may be my favorite (for now). It is SO EASY and takes a short time to put it together. The chopper that I use.

In a large salad bowl, combine sliced tomatoes, corn kernels, sliced avocado, thinly sliced red onion, 1/4 cup chopped cilantro and press in 2 garlic cloves. Drizzle the top with 2 Tbsp extra virgin olive oil, 2-3 Tbsp lime juice (adding it to taste). Add 1 tsp sea salt and 1/8 tsp black pepper, or season to taste.

For the salad, bring a large pot of salted water to boil and prepare an ice bath. Once boiling, add the corn and cook for 3 minutes. Remove them to the ice bath to stop cooking.
