Tex Mex Casserole July 18, 2018 When I was on a total elimination diet while nursing Quint to figure out what was giving him issues, I was introduced to Oh She Glows and lived on her vegan recipes during that time. Her Tex-Mex casserole was hands down not only my favorite dish, but also my husband's.

It's a fusion that supposedly started with Texans who were of Mexican descent and you can easily identify Tex-Mex because of the heavy use of cheese.

Fry pan: onion, garlic. peppers and jalapeno, saute for 7-8 minutes..season with salt and pepper. Stir in: tex mex spice, corn, diced tomatoes, tomato sauce, Kale OR spinach, beans and rice. Stir well again to combine. Turn the oven on to 350 and spray a 9×9 oven-safe casserole dish. Transfer the beef mixture to the prepared casserole dish. Top the beef mixture with the shredded cheese and sprinkle the diced green pepper over the cheese. Place the dish in the oven and bake for 25 minutes.
