Homemade pumpkin sweet dough (basically just pumpkin cinnamon roll dough) topped with a pumpkin spice sugar crust. It's my new favorite concha flavor and I think it just might be yours as well! In the bowl of a stand mixer, fitted with the paddle attachment, combine 5 1/2 cups of the flour, brown sugar, salt, pumpkin pie spice and yeast.

These pumpkin concha muffins pair well with a hot cup of cafecito or cocoa on a cozy Autumn morning. We are using bread flour for this recipe, and European butter for extra flavor due to it's higher fat content. The texture of these conchas are so soft, and the crumb tears beautifully because the bread is so enriched and lightly sweetened..

Place the concha topping dough between two sheets of plastic wrap or parchment paper. Roll the dough out to 4mm. Place on a sheet pan and into the freezer for 15 minutes (this helps with achieving a clean cut disc). Cut the cold concha topping with a 2.4 inch/6 cm round cutter (weighing about 15g each). Directions. In a measuring cup place your warm water and yeast and let it poof for 5 minutes, meanwhile, in a small bowl place your lukewarm soy milk and apple cider vinegar and let it sit for 5 minutes. In the bowl of your standard mixer place the coconut oil, pumpkin, sugar, and vanilla, and with the paddle attachment mix till well combined.

To make the bread: Stir warm water and yeast together in a large bowl; let stand until yeast softens and begins to form a creamy foam, about 5 minutes. Mix in 2 cups flour, milk, sugar, melted butter, egg, and salt until combined. Gradually mix in remaining 2 cups flour and cinnamon until dough comes together.
