Marinate the fish for several hours or overnight. Remove the skin. Slice and season fish with salt and pepper. Use olive oil and lemon juice to brush the fish. Sprinkle with paprika, then grill on a hot charcoal grill or bake in a preheated oven for eight minutes per inch of thickness. Serve with horseradish sauce.

Dip each steak into the brine, then place it into a 1-gallon zipper-lock style bag. Add 1-2 cups of brine mixture to the bag and set this away for your smoked marlin supper. Lastly, we cut a huge chunk, perhaps 4-5 pounds. This is coming from the side of the fish; thus, the skin is attached.
